Preheat your oven to 400°F. Lightly spray the bottom and sides of a 9-inch pie dish with cooking spray.

Arrange the frozen tater tots in a single layer to fully cover the bottom of the prepared pie dish. Place the dish in the preheated oven and bake for 15 minutes, or until the tater tots are tender and slightly crispy.

While the tater tots are baking, cook the bacon until crispy. This can be done in a skillet over medium heat or baked in the oven alongside the tater tots. Once cooked, transfer the bacon to a paper towel-lined plate to drain, then crumble it.

In a large mixing bowl, whisk together the eggs, cottage cheese, salt, and freshly ground black pepper until well combined. Stir in the shredded sharp cheddar and Gruyère cheese.

Carefully remove the pie dish with the tater tots from the oven. Using a fork or the back of a spoon, firmly mash the tater tots into an even layer, pressing them up the sides of the dish to form a crust.

Reduce the oven temperature to 350°F.

Pour the egg and cheese mixture evenly over the mashed tater tot crust in the pie dish.

Sprinkle the crumbled crispy bacon over the top of the egg mixture.

Return the quiche to the oven and bake for 35 minutes, or until the center is just set and the top is lightly golden brown. A knife inserted into the center should come out clean.

Allow the quiche to cool slightly for about 10 minutes before slicing and serving. This helps the quiche set further and makes for cleaner slices.
