Heat a pan over medium heat and add 1 teaspoon of olive oil. Add a sprig of fresh thyme to the pan.

Add the thinly sliced onion to the pan and sauté until softened and starting to caramelize, about 8-10 minutes.

Add the sliced mushrooms to the pan with the onions. Continue to cook until the mushrooms are browned and the onions are deeply caramelized, about 5-7 minutes.

Season the onion and mushroom mixture with salt and black pepper to taste.

Remove the cooked onion and mushroom mixture from the pan and place it into a bowl. Add more fresh thyme to the bowl and mix it in with the onions and mushrooms.

Return the pan to the heat and add 2 tablespoons of plant butter. Let it melt completely.

Place the 2 slices of bread into the melted butter in the pan.

Evenly sprinkle the 50g shredded cheese of choice over both slices of bread in the pan.

Spoon the cooked onion and mushroom mixture onto one of the bread slices, over the melted cheese.

Place the second slice of bread (with the cheese side down, onto the mixture) on top to form a sandwich.

Cook the sandwich in the pan until the bottom is golden brown, about 2-3 minutes. Flip the sandwich and cook the other side until it is also golden brown and the cheese is fully melted and gooey, about 2-3 minutes.

Remove the finished French onion & mushroom toast from the pan and place it on a cutting board.

Garnish the top of the toast with a sprinkle of fresh thyme and a sprinkle of salt. Cut the toast in half and serve immediately.
