Preheat your oven to 180°C (375°F).

In a large bowl, combine the bread flour, baking powder, baking soda, 0 calorie sugar alternative, and a pinch of salt. Mix the dry ingredients well with a spoon.

Add the 0% Greek yogurt and egg yolk to the dry ingredients. Mix with a fork until a rough dough forms, then press it together with your hands and knead into a dough ball.

Lightly flour a clean surface. Place the dough ball on the floured surface and roll it out into a square shape, about 1 inch thick, using a rolling pin.

Evenly spread 30 grams of light butter over the rolled-out dough. Sprinkle 30-50 grams of brown stevia over the butter, then dust generously with cinnamon.

Slice the dough into six equal strips using a pizza cutter or knife. Carefully roll up each strip, starting from one end, to form individual cinnamon bun spirals.

Grease a baking dish with 15 grams of light butter. Place the rolled cinnamon buns into the greased baking dish and gently press down on them.

Bake in the preheated oven for 25-30 minutes, or until golden brown and cooked through.

While the buns are baking, prepare the protein frosting. In a bowl, combine the light cream cheese, protein powder, vanilla extract, and sweetener to taste. Add water slowly, mixing until it reaches a thick consistency similar to a whey drip. For a silky smooth consistency, you can pour the mixture through a sieve.

Once the buns have cooled slightly after baking, drizzle the prepared protein frosting generously over them. Slice and serve.
