In a medium bowl, combine the shredded Trader Joe's Fully Cooked Chicken Breast, softened Trader Joe's Cream Cheese, drained Trader Joe's Fire Roasted Diced Green Chiles, Trader Joe's Taco Seasoning Mix, and Trader Joe's Shredded Mexican Style Cheese Blend. Mix well until all ingredients are evenly combined.

To soften the Trader Joe's Corn Tortillas, wrap them in a damp paper towel and microwave for 30-60 seconds, or until pliable. This prevents them from cracking when rolled.

Lay out a softened tortilla. Spoon about 1 1/2 to 2 tablespoons of the chicken mixture in a line across the center of the tortilla. Roll the tortilla up tightly and place it seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.

Lightly brush the tops and sides of the rolled taquitos with olive oil. This helps them crisp up in the oven.

Bake the taquitos for 18-22 minutes, or until golden brown and crispy. Flip them halfway through baking for even crispness.

While the taquitos are baking, prepare the Spicy Avocado Ranch Dipping Sauce. In a small food processor or blender, combine the ripe Trader Joe's Avocado, Trader Joe's Greek Yogurt, Trader Joe's Ranch Dressing, Trader Joe's Green Dragon Hot Sauce, lime juice, garlic powder, and salt. Blend until smooth and creamy. Taste and adjust hot sauce or salt as needed.

Once baked, remove the taquitos from the oven. Serve immediately with the Spicy Avocado Ranch Dipping Sauce. Garnish with chopped fresh cilantro and a sprinkle of Trader Joe's Everything But The Elote Seasoning Blend, if desired.
