In a large pot, melt the 2 tablespoons of butter over medium heat.

Once the butter is melted, add the 1/2 teaspoon of red pepper flakes, 4-5 minced garlic cloves, and half a diced shallot to the pot.

Sauté the ingredients, stirring occasionally, until they become fragrant, about 2-3 minutes.

Pour the 2 1/4 cups of chicken broth and 2 cups of half & half into the pot.

Add the 1 teaspoon of paprika, 1 teaspoon of Dijon mustard, and 1 teaspoon of oregano. Season with salt and pepper to taste.

Stir the mixture well to combine all ingredients, then bring it to a boil.

Once boiling, add the 3 cups of pasta to the pot. Reduce the heat to medium-low and stir often, approximately every 3-4 minutes, to prevent the pasta from sticking or burning.

When the pasta is about three-quarters of the way cooked, add the 1 1/2 cups of chopped uncooked broccoli to the pot.

Mix the broccoli into the pasta, then cover the pot and cook for another 3-4 minutes, continuing to stir often to prevent sticking or burning.

At this point, if you prefer a saucier consistency, you can add extra chicken broth or half & half as needed to finish cooking the pasta to your desired doneness.

Once the pasta is fully cooked, turn off the heat.

Add the 1/2 cup of sharp cheddar cheese, 1/2 cup of Colby jack cheese, and 1/2 cup of Parmesan cheese to the pot.

Stir well until all the cheeses are completely melted and smoothly incorporated into the pasta sauce.

Serve immediately. Optionally, top with fresh parsley flakes and additional Parmesan cheese before enjoying.
