Preheat your oven to 375°F (190°C).

Place a large pan on the stove over medium-high heat. Add the butter and allow it to melt.

Add the ground beef to the pan. Use a spoon to break up the beef as it cooks. Season with smoked paprika powder, garlic powder, and salt. Mix all ingredients thoroughly and continue to cook until the beef is fully browned, about 8-10 minutes.

Once the beef is cooked, reduce the heat to low. Add 2 cups of shredded cheese directly to the pan with the beef. Stir continuously until the cheese is completely melted and well combined with the ground beef.

Stir in the finely chopped spring onions and red onion into the cheesy beef mixture. Remove from heat.

While the beef is cooking, prepare the guacamole. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado flesh with a fork until it reaches your desired consistency (smooth or slightly chunky).

Add the finely chopped tomato, finely chopped red onion, lemon juice, olive oil, salt, and black pepper to the mashed avocado. Mix all the guacamole ingredients together until thoroughly combined.

Spread a layer of nacho chips evenly on a large baking tray or oven-safe dish.

Spoon the prepared cheesy beef mixture generously over the layer of nacho chips.

Sprinkle an additional 1 cup of shredded cheese over the beef and chips. Distribute the sliced jalapeños over the cheesy layer.

Place the baking tray into the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.

Once the nachos are removed from the oven, add generous dollops of the freshly prepared guacamole on top. Add dollops of sour cream alongside the guacamole.

Garnish with additional fresh chopped spring onions. Serve immediately while hot.
