Crack one large egg into a small bowl. Add 1 tablespoon of Duke's Real Mayonnaise to the egg. Whisk thoroughly until the mixture is completely blended and smooth. Repeat this process for each of the remaining eggs and mayonnaise, using separate bowls or preparing them one at a time.

Lightly spray or drizzle a microwave-safe ramekin or small bowl with olive oil to prevent the egg from sticking. Prepare one ramekin for each omelette you plan to cook.

Pour one whisked egg and mayonnaise mixture into a greased microwave-safe ramekin.

Place the ramekin in the microwave and cook for 40 seconds. Cooking time may vary slightly depending on your microwave's power. The egg should be set and fluffy. Repeat for each omelette.

Carefully remove the ramekin from the microwave. Invert the fluffy egg onto a serving plate.

Season the cooked egg with flaky salt and pepper to taste. Sprinkle generously with freshly grated Parmesan cheese and garnish with chopped scallions (or chives). Serve immediately.
