Preheat your oven to 400°F (200°C).

Peel the large sweet potato and grate it. In a bowl, combine the grated sweet potato with 1 tablespoon of olive oil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and salt and pepper to taste. Mix all ingredients thoroughly until well combined.

Press the sweet potato mixture evenly into a pie pan to form the crust. Pre-bake the crust in the preheated oven for 15 minutes.

While the crust is pre-baking, prepare the quiche filling. In a separate bowl, whisk the 3 eggs. Add 1/2 cup of milk to the whisked eggs.

Season the egg mixture with 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and salt and pepper to taste. Whisk until all ingredients are well combined.

Fold in 1/2 cup of chopped spinach, 1/2 cup of chopped mushrooms, and 1/4 cup of mozzarella cheese into the egg mixture. Mix well to ensure vegetables and cheese are evenly distributed.

Reduce the oven temperature to 375°F (190°C). Carefully pour the prepared quiche filling into the pre-baked sweet potato crust.

Bake the quiche for 25-30 minutes, or until it is cooked through and set. The center should be firm when gently shaken.
