Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the cubed potatoes, olive oil, kosher salt, and black pepper. Toss well to ensure the potatoes are evenly coated.

Spread the seasoned potatoes in a single layer on the prepared baking sheet. Avoid overcrowding the pan, as this will steam the potatoes instead of roasting them. If necessary, use two baking sheets.

Roast the potatoes for 20 minutes, then remove from the oven and carefully flip them with a spatula.

While the potatoes are roasting, combine the chopped fresh rosemary, fresh thyme, and minced garlic in a small bowl.

After flipping the potatoes, sprinkle the herb and garlic mixture evenly over them. Return the baking sheet to the oven and continue roasting for another 10-12 minutes, or until the potatoes are tender and lightly browned.

Remove the potatoes from the oven. Sprinkle the grated Unexpected Cheddar cheese evenly over the hot potatoes. Return to the oven for 3-5 minutes, or until the cheese is melted and bubbly.

Carefully remove the baking sheet from the oven. Garnish the roasted potatoes with fresh chopped parsley before serving immediately.
