Prepare the beef marinade: In a medium bowl, combine the sliced flank steak with half of the minced garlic and half of the minced ginger. Add 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 2 tablespoons of hoisin sauce, 1 teaspoon of sesame oil, 1 tablespoon of cornstarch, and 1 tablespoon of baking soda. Sear the beef: Heat 2 tablespoons of avocado oil in a large wok or skillet over medium-high heat until shimmering. Add the marinated beef in a single layer, working in batches if necessary to avoid overcrowding the pan. Sear for about 8-10 minutes, stirring occasionally, until almost fully cooked and browned. Remove the beef from the pan and set aside on a plate.

Cook the broccoli: To the same pan (add a splash more avocado oil if needed), add 1 tablespoon of olive oil, the broccoli florets, and the remaining minced garlic and ginger. Stir-fry for 2-3 minutes. Cover the pan and cook for another 3-4 minutes, or until the broccoli turns a vibrant green and is slightly tender-crisp.

Combine and simmer: Pour the prepared stir-fry sauce over the broccoli in the pan. Bring to a gentle simmer, then return the seared beef to the pan. Stir to combine. Cover and let it simmer for about 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly. In a small bowl, whisk together 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Pour the slurry into the simmering sauce, stirring constantly, until the sauce reaches your desired thickness.

Serve: Remove from heat. Serve the Beef and Broccoli immediately over cooked white rice. Garnish with toasted sesame seeds.
