Prepare all ingredients: Ensure rice is cooked and cooled. Dice the Spam. Mince the garlic. Slice the scallions. Beat the eggs in a bowl.

Heat a large skillet or wok over medium-high heat. Add 2 tablespoons of neutral oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

In a small bowl, whisk together the 2 tablespoons of granulated sugar, 2 tablespoons of soy sauce, and 2 tablespoons of mirin until the sugar is mostly dissolved. This is your glazing sauce.

Return the skillet to medium-high heat and add 1 tablespoon of neutral oil. Add the diced Spam and cook, stirring occasionally, until the pieces develop a golden crust, about 5-7 minutes.

Pour the prepared glazing sauce over the cooked Spam. Sauté continuously, moving the Spam pieces around, as the sauce will quickly absorb and thicken into a sticky glaze. This should take about 1-2 minutes. Once glazed, remove the Spam from the skillet and set aside.

Add the frozen carrots and peas to the skillet (no need to clean it). Sauté for 2-3 minutes until heated through and slightly tender.

Return the fried rice mixture and the glazed Spam to the skillet with the carrots and peas. Stir everything together until well combined and heated through.

Serve the Spam Musubi Fried Rice immediately, garnished with sliced scallions and a generous sprinkle of crushed seaweed or furikake.
