Heat 2 tablespoons of olive oil in a large pan or skillet over medium heat. Add the chopped onion and shallots and sauté until softened and lightly browned, about 5-7 minutes.

Sprinkle the paprika over the sautéed onions and shallots, stirring to combine. Cook for 1 minute until fragrant.

Add the minced garlic to the pan and stir, cooking for another minute until fragrant, being careful not to burn the garlic.

Stir in the rinsed and drained white beans. Pour 1/2 cup of water over the beans and stir everything together. Season with salt and black pepper.

Allow the bean mixture to simmer, stirring occasionally, for 5-7 minutes, or until the beans are thoroughly heated through and coated in a thick, saucy consistency. Reduce heat to low to keep warm while preparing the eggs.

In a separate non-stick pan, heat 1 tablespoon of olive oil over medium heat. Crack two eggs into the pan, being careful not to break the yolks. Fry the eggs to your desired doneness.

Once the eggs are nearly cooked, sprinkle a generous amount of grated mozzarella cheese over them. Cover the pan with a lid to allow the cheese to melt and the eggs to finish cooking (the yolks should remain slightly runny).

Repeat steps 6 and 7 for the remaining eggs, cooking two at a time.

To assemble, scoop a portion of the prepared saucy beans into each of four bowls. Carefully transfer two cheesy fried eggs from the pan and place them on top of the beans in each bowl.

Garnish each serving with fresh cilantro leaves. Serve immediately.
