In a large bowl, combine the all-purpose flour, salt, baking powder, and olive oil.

Add the plain yogurt to the bowl with the dry ingredients.

Mix the ingredients, first with a spatula until a shaggy dough forms, then continue mixing by hand until well combined.

Turn the dough out onto a clean work surface.

Knead the dough for 3-5 minutes until it becomes smooth and elastic.

Cover the dough with a clean cloth and let it rest at room temperature for 30 minutes.

After resting, divide the dough into six equal balls.

Lightly flour your work surface. Take one dough ball and, using a rolling pin, roll it out into a thin flatbread.

Heat a dry pan (such as a cast iron skillet or non-stick pan) over high heat.

Once the pan is hot, place one flatbread in it. Cook until it puffs up and develops light char marks on one side, about 1-2 minutes.

Flip the flatbread and continue cooking on the other side until it is cooked through and lightly browned, about another 1-2 minutes. Repeat with the remaining dough balls.

Serve the easy yogurt flatbreads warm.
