In a small bowl, combine 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon smoked paprika, and 1/4 teaspoon dried thyme. Season the tenderized cube steaks generously on both sides with this spice mixture.

Add the 1 sliced small onion to the skillet. Sauté the onions for 3 to 4 minutes, stirring occasionally, until they are softened and translucent.

After the onions have softened, sprinkle in 2 tablespoons of all-purpose flour into the skillet. Stir constantly to combine the flour with the butter and onions, cooking for about 1 minute to cook out the raw flour taste.

Gradually pour in 2 cups of beef broth, whisking continuously to prevent any lumps from forming in the gravy. Ensure the gravy is smooth.

Season the gravy with 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/4 teaspoon onion powder, or adjust to taste.

Bring the gravy to a simmer and let it continue to simmer for 5 to 7 minutes, stirring occasionally, until it reaches your desired thickness.

Return the cooked cube steaks to the thickened gravy in the skillet, nestling them into the sauce.

Cover the skillet with a lid and reduce the heat to medium-low. Let the smothered cube steak cook for about 20 minutes, allowing the flavors to meld and the steak to become very tender.
