Place the 500g of pork ribs in a large mixing bowl. Mince 20g of garlic and 10g of ginger.

Add the minced garlic, minced ginger, 15ml cooking wine, 15ml light soy sauce, 15ml oyster sauce, 5g sugar, 2g white pepper, 1 egg white, and 10g corn starch to the ribs in the bowl.

Mix all the marinade ingredients thoroughly with the ribs by hand, ensuring each rib is well coated.

Marinate the ribs for 30 minutes at room temperature.

Heat an adequate amount of cooking oil in a large pan or wok for deep frying over medium-high heat.

Once the oil is hot (around 170-180°C), carefully place the marinated ribs into the pan in batches, ensuring not to overcrowd the pan.

Fry the ribs for about 5-7 minutes per batch, turning occasionally, until they are golden brown and crispy on all sides. Remove the fried ribs from the pan and place them on a wire rack lined with paper towels to drain excess oil. Set aside.

While the ribs are frying or after they are done, mince another 20g of garlic and chop 10g of spring onion.

In a clean pan or wok, add 15ml of cooking oil and heat over medium heat.

Sauté the minced garlic and chopped spring onion until aromatic, about 1 minute.

Add 15ml light soy sauce, 15ml oyster sauce, 30ml water, 5g sugar, 2g white pepper, and 5g corn starch to the pan with the sautéed aromatics.

Stir continuously over medium heat until the sauce thickens to your desired consistency, about 2-3 minutes.

Return the previously fried ribs to the pan with the prepared sauce.

Toss the ribs gently to ensure they are thoroughly coated with the garlic sauce.

Plate the crispy garlic ribs and garnish with fresh spring onion before serving immediately.
