Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.

Peel the 2 boiled potatoes and place them in a large bowl. Mash them thoroughly until completely smooth, ensuring no lumps remain.

To the mashed potatoes, add the 2 eggs, 1 cup of Greek yogurt, 1 1/2 teaspoons of gluten-free baking powder, 3 tablespoons of cornstarch, and a pinch of salt.

Mix all the ingredients together with a spatula or spoon until the mixture is smooth and thick, forming a dough-like consistency.

Take portions of the mixture and shape them into small, round buns with your hands. Place the shaped buns onto the prepared baking tray, leaving some space between each.

In a separate small bowl, lightly beat the 1 egg yolk. Using a pastry brush, carefully brush the top of each bun with the beaten egg yolk.

Generously sprinkle sesame seeds over the top of each egg-washed bun.

Bake the buns in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through.
