Preheat your oven to 375°F (190°C). Lightly grease a baking dish with cooking spray or butter.

Prepare the chicken: Place the chicken breast cutlets between two sheets of parchment paper. Using a meat mallet, tenderize and flatten each piece to an even thickness, about 1/2 inch.

Prepare the broccoli cheddar filling: In a medium mixing bowl, combine the softened cream cheese, half of the grated cheddar cheese (4 ounces), and the chopped broccoli. Add the garlic powder and 1/4 teaspoon of black pepper. Stir well until all ingredients are thoroughly combined.

Prepare the cracker topping: In a separate small bowl, combine the crushed Ritz crackers with the remaining half of the grated cheddar cheese (4 ounces). Mix well.

Assemble the dish: Arrange the flattened chicken pieces in the prepared baking dish. Evenly spread the broccoli cheddar filling over the top of each chicken piece. Generously sprinkle the Ritz cracker and cheddar cheese topping over the chicken.

Finish and bake: Lightly spray the topping with cooking spray, or dot with small pieces of butter for extra richness. Sprinkle a final dash of black pepper over the dish. Bake in the preheated oven for 25 minutes, or until the chicken is cooked through and the topping is golden brown and crispy.

Prepare the side dish: While the chicken bakes, prepare the cheddar broccoli flavored rice (or plain rice) according to the package instructions.

Serve: Once baked, remove the Broccoli Cheddar Chicken from the oven and let it rest for a few minutes before serving. Serve hot alongside the prepared rice.
