Heat 1 tablespoon of oil in a large pot or Dutch oven over medium-high heat.

Add the sliced ginger, minced garlic, and the white parts of the sliced green onions to the pot. Sauté for 2 to 3 minutes until the aromatics are fragrant.

Add the diced chicken breast to the pot. Cook until the chicken is browned on all sides, approximately 5 to 7 minutes.

Season the chicken with 1 teaspoon of salt and 1/2 teaspoon of white pepper. Stir well to combine.

Pour in 6 cups of chicken broth, 1/4 cup of soy sauce, and 1 tablespoon of sesame oil. Bring the soup to a boil, then reduce the heat to low and let it simmer for 10 minutes.

Add 1 cup of dry noodles to the simmering soup. Cook the noodles according to their package directions, typically 3 to 5 minutes, until they are tender.
