Bring a large pot of salted water to a rolling boil. Add the dry pasta and cook according to package directions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and toss with 1 tablespoon of olive oil to prevent sticking.

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the chopped yellow onion and cook until softened and translucent, about 5-7 minutes.

Add the minced garlic, dried oregano, and red pepper flakes (if using) to the skillet. Cook for 1 minute more, until fragrant, being careful not to burn the garlic.

Pour in the crushed tomatoes, salt, and black pepper. Bring the sauce to a gentle simmer, then reduce the heat to low, cover, and let it cook for 10 minutes to allow the flavors to meld.

Stir in the heavy cream and grated Parmesan cheese until well combined and the cheese has melted into the sauce.

Add the fresh spinach to the sauce, a handful at a time, stirring until it wilts down. Continue until all the spinach is incorporated.

Add the cooked and drained pasta to the skillet with the sauce. Toss to coat the pasta evenly. If the sauce seems too thick, add a splash or two of the reserved pasta cooking water until it reaches your desired consistency.

Serve immediately, garnished with fresh chopped basil and additional grated Parmesan cheese, if desired.
