Score the 1 kg chicken pieces. In a bowl, add the chicken. Add the salt, red chili powder, paprika, cumin powder, coriander powder, black pepper, garam masala, and turmeric powder. Stir in the 2 tablespoons peri peri sauce and 1 tablespoon fresh coriander. Cook the sauce for 2 minutes, stirring constantly, until slightly thickened.

Serve the cooked peri peri chicken alongside the fluffy rice. Drizzle the freshly made peri peri sauce over the chicken and rice. Garnish with extra fresh coriander, if desired.
