Place the boneless, skinless chicken thighs into the bowl with the chicken powder paste, ensuring they are well coated. Season generously with salt and black pepper.

Heat a large skillet or wok over medium-high heat. Once hot, add the chicken thighs and cook, flipping every 3 to 4 minutes, until the chicken is cooked through and has rendered out a significant amount of fat, approximately equal to the initial oil added. This should take about 10-12 minutes.

While the chicken is cooking, prepare the chili mayo sauce. In a small bowl, combine the mayonnaise, chili sauce, and chopped fresh parsley. Mix well and set aside.

Once the chicken is cooked, remove it from the skillet and transfer to a cutting board. Cut the chicken into bite-sized pieces. Drizzle the prepared chili mayo sauce over the chicken.

Leave the rendered chicken fat in the skillet. Add the white parts of the green onions and minced garlic to the hot chicken fat and stir-fry for 30 seconds until fragrant.

Push the rice to one side of the skillet, creating an empty space. Crack the two large eggs into the empty space and scramble them until just set. Then, incorporate the scrambled eggs into the fried rice.
