In a separate medium-sized bowl, combine the 15 ounce can of drained sweet corn, the diced jalapeno (with seeds removed), 2 tablespoons of chopped cilantro, 2 tablespoons of sour cream (or Greek yogurt), 2 tablespoons of mayonnaise, 1 tablespoon of lime juice, 2 tablespoons of grated Parmesan or Cotija cheese, and 1/2 teaspoon of chile lime seasoning. Mix all ingredients thoroughly until well combined.
Once the sweet potatoes are roasted and the beef is seasoned, it's time to assemble your bowls. Divide the roasted sweet potatoes among 4 serving bowls.

Top each bowl of sweet potatoes with a generous portion of the seasoned ground beef.
