In a very large skillet, add 1 teaspoon sesame oil and heat over medium-high heat.

Add the white parts of the 2 medium chopped green onions to the pan. Fry until fragrant, about 1-2 minutes.

Add 8 ounces of sliced mushrooms to the pan. Fry the mushrooms until they are around halfway cooked, about 3-4 minutes.

Push the cooked mushrooms and green onion whites to one side of the pan.

Add 1 pound of 96% lean ground beef to the empty side of the pan. Break it apart with a spoon.

Season the ground beef with 1 tablespoon garlic powder, 2 tablespoons monkfruit sweetener, and 2 tablespoons soy sauce.

Mix all the ingredients in the pan (ground beef, mushrooms, green onion whites, and seasonings) together, breaking up the beef as it cooks.

Once the meat is about 90% cooked, add 10 ounces of shredded cabbage to the pan.

Stir the cabbage into the mixture until it is combined and cooked through, about 3-5 minutes.

Finish the dish by sprinkling 1 teaspoon black pepper and the green parts of the 2 medium chopped green onions over the stir-fry.
