Wash the potatoes thoroughly. Do not peel them at this stage. Place the raw, unpeeled potatoes directly into the freezer. Freeze for at least 3 hours, or preferably overnight, until completely solid.

Once frozen solid, remove the potatoes from the freezer and allow them to thaw completely at room temperature. This will take approximately 1-2 hours depending on their size and room temperature. The potatoes will become soft and pliable.

Once thawed, peel the skin from each potato. The skin should come off very easily.

Gently break each peeled potato in half. The texture will be soft and somewhat gelatinous, making them easy to break rather than cut.

Preheat your air fryer to 190°C. Place the potato halves in the air fryer basket in a single layer, ensuring not to overcrowd them. Cook for 18-20 minutes, or until beautifully golden brown and crispy on the outside.

Once cooked, transfer the crispy potatoes to a serving dish. Immediately sprinkle generously with peri peri seasoning or your preferred seasoning, tossing gently to coat.
