Heat 1 tablespoon of olive oil in a large skillet or pot over medium-high heat.

Add 1 pound of peeled and deveined shrimp to the skillet and season generously with Creole seasoning. Cook the shrimp for 2-3 minutes per side until pink and opaque. Remove the cooked shrimp from the skillet and set aside.

In the same skillet, add 1 cup of chopped onion, 1 cup of chopped green bell pepper, and 1 cup of chopped celery. Cook until the vegetables are softened, about 5-7 minutes.

Stir in 2 tablespoons of minced garlic and cook for an additional 1 minute until fragrant.

Add 1 (14.5 ounce) can of undrained diced tomatoes, 1 (8 ounce) can of tomato sauce, and 1/2 cup of chicken broth to the skillet.

Season the mixture with 1 tablespoon of Worcestershire sauce, 1 teaspoon of dried thyme, 1 teaspoon of dried oregano, and 1/2 teaspoon of cayenne pepper (or to taste). Add salt and black pepper to taste.

Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for at least 15-20 minutes to allow the flavors to meld.

Return the cooked shrimp to the pot and stir to combine. Cook for another 2-3 minutes until the shrimp are heated through.

Serve the Shrimp Creole hot over cooked rice.

Garnish with fresh parsley before serving.
