Preheat your oven to 375°F. Grease an 8x8 inch (or similar 2-quart) baking dish thoroughly with the melted unsalted butter.

In a large bowl, whisk together the large eggs, whole milk, salt, and freshly ground black pepper until well combined and slightly frothy.

Stir in 1 cup of the shredded sharp cheddar cheese into the egg mixture. Reserve the remaining 1/2 cup of cheese for the topping.

Spread about half of the crushed butter crackers evenly over the bottom of the prepared baking dish.

Carefully pour the egg and cheese mixture over the cracker layer in the baking dish.

Sprinkle the remaining crushed butter crackers evenly over the top of the egg mixture, followed by the reserved 1/2 cup of shredded sharp cheddar cheese.

Bake in the preheated oven for 25-30 minutes, or until the eggs are set, the top is golden brown, and the cheese is bubbly. A knife inserted into the center should come out clean.

Remove from the oven and let it rest for 5 minutes before serving. Garnish with thinly sliced green onions, if desired.
