Preheat your oven to 375°F. Line a baking sheet with parchment paper.
In a medium bowl, combine the shredded cheddar cheese, chopped green onions, and chopped crispy bacon.

Crack one large egg into the mixture. Mix everything together thoroughly with a spoon or your hands until well combined and the egg binds the ingredients.

Unroll the crescent dough from the package. Separate the dough into four rectangles, pressing together any perforations to seal them.

Place a generous portion of the prepared filling (about 1/4 of the mixture) along the long side of each crescent dough rectangle.

Carefully roll up each crescent dough rectangle, encasing the filling completely.

Gently pinch the ends of each rolled-up dough piece together to form a donut or bagel shape. Place the shaped roll-ups onto the prepared baking sheet.

In a small bowl, whisk one large egg to create an egg wash.

Brush the top and sides of each roll-up with the egg wash.

Sprinkle sesame seeds generously over each egg-washed roll-up.
Bake in the preheated oven for 12-15 minutes, or until the roll-ups are golden brown and puffed.

Remove from the oven and let cool slightly before serving.
