Cut the 1 kg of pork belly into large, roughly 2-inch pieces.

Bring a pot of water to a boil. Add the cut pork belly to the boiling water and cook for 5 minutes. After 5 minutes, remove the pork belly and rinse it thoroughly under cold water.

Place the blanched pork belly pieces into a pan over medium-high heat and fry them until they turn golden brown on all sides. This helps render some fat and adds flavor.

Add the 10 g ginger, 20 g garlic, 30 g shallots, 2 cinnamon sticks, 2 star anise, and 5 dried chili to the pan with the fried pork belly. Stir fry all the ingredients together for 2-3 minutes until they become fragrant.

Pour in the 150 ml light soy sauce, 50 ml dark soy sauce, 30 ml oyster sauce, 30 g sugar, and 200 ml water into the pan. Stir well to combine all the ingredients with the pork and aromatics.

Transfer the entire contents of the pan into a pot. Cover the pot and cook over medium-low heat for 1 hour, allowing the pork to braise and become tender.

Add the 5 hard-boiled eggs to the pot with the braised pork. Continue to cook for an additional 30 minutes, allowing the eggs to absorb the flavors of the braising liquid.

Serve the braised pork and eggs hot with freshly cooked rice.
