Set up a breading station with three separate bowls. In the first bowl, place the all-purpose flour. In the second bowl, prepare an egg wash by whisking the egg. In the third bowl, place the Panko breadcrumbs.

Dredge each fish fillet thoroughly in the flour, ensuring it is fully coated. Dip the floured fillet into the egg wash, allowing excess to drip off. Finally, coat the fillet completely with Panko breadcrumbs, pressing gently to adhere. Repeat for all fish fillets.

Place the breaded fish fillets into an air fryer basket. Air fry them at 375°F for 12 minutes, or until golden brown and cooked through.

While the fish is cooking, prepare the tartar sauce. In a medium bowl, combine mayonnaise, dill relish, finely diced white onion, and lemon juice. Add a pinch of salt and ground black pepper. Mix all ingredients thoroughly until well combined.

Melt the butter in a small pot or skillet. Place the hamburger buns, cut side down, into the melted butter and toast them until they are nice and golden brown. This can also be done in a toaster or on a griddle.

To assemble each sandwich, place the bottom half of a toasted bun on a clean surface. Spread a generous amount of the prepared tartar sauce onto the bottom bun. Place a slice of cheese on top of the tartar sauce. Carefully place a cooked fish fillet on top of the cheese. Cover with the top half of the toasted bun.

Gently press down on the assembled sandwich (the 'Squish it' step). Serve immediately and enjoy your homemade Filet-O-Fish!
