Prepare the broccoli: Cut the broccoli florets from the head. Peel the broccoli stems for extra crunch, then thinly slice the peeled stems.

Bring a large pot of water to a rolling boil. Add a pinch of salt and 1 teaspoon of oil to the boiling water.

Add the broccoli florets and sliced stems to the boiling water. Blanch for 1 minute.

Immediately transfer the blanched broccoli to a bowl of ice water to stop the cooking process and retain its vibrant color and crispness. Let it cool for about 3-5 minutes.

Drain the broccoli well from the ice bath and set aside.

Mince the 3 cloves of garlic and thinly slice the 1 red chili.

Prepare the sauce: In a small bowl, combine the oyster sauce, soy sauce, granulated sugar, sesame oil, water, and cornstarch. Mix all sauce ingredients thoroughly until well combined and the cornstarch is fully dissolved.

Heat 1 tablespoon of oil in a wok or large skillet on high heat until shimmering.

Add the minced garlic and sliced red chili to the hot wok. Stir-fry for 10-15 seconds until fragrant, being careful not to burn the garlic.

Add the blanched and drained broccoli to the wok. Stir-fry for 1-2 minutes to heat through and lightly cook.

Pour the prepared sauce mixture into the wok over the broccoli. Continue to stir-fry for another 1-2 minutes until the sauce thickens and evenly coats the broccoli.

Serve the crisp and bright garlic broccoli immediately.
