In a medium-sized bowl, add the 500g chicken breast or thigh (cut into cubes). Add 2 tablespoons soy sauce, 1 tablespoon honey, 1 teaspoon grated ginger, 2 minced garlic cloves, 1 tablespoon cornflour, and season with salt and pepper to taste. Mix all ingredients thoroughly until the chicken pieces are evenly coated.

Heat 1 tablespoon oil in a large pan or skillet over medium-high heat. Once hot, add the marinated chicken and cook for 5-7 minutes, turning occasionally, until the chicken is golden brown and fully cooked through.

While the chicken is cooking, in a separate small bowl, combine 2-3 tablespoons chilli crunch (adjust to desired spice level), 1 tablespoon soy sauce, 1 tablespoon honey, 1 tablespoon rice vinegar, and 1 teaspoon sesame oil. Stir well to combine all the sauce ingredients.

Once the chicken is cooked, transfer it from the pan directly into the bowl with the prepared chilli crunch sauce. Toss the chicken until every piece is completely and evenly coated with the sauce.

The chilli crunch chicken is now ready. Serve immediately with your choice of sides, such as coconut rice and a spicy cucumber salad. Alternatively, portion the chicken into meal prep containers for future meals. Garnish with sesame seeds and chopped spring onion before serving. The prepared meal will last in the fridge for at least 3 days and can be enjoyed cold.
