Pat the salmon fillets dry with paper towels. This helps ensure a crispier crust. In a small bowl, combine the garlic powder, onion powder, paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

Season both sides of the salmon fillets evenly with the spice mixture. Squeeze the juice from 1/2 lemon over the seasoned salmon and sprinkle with the zest from 1/2 lemon.

Place the panko breadcrumbs in a shallow dish. Press the top side of each salmon fillet firmly into the panko breadcrumbs to create an even, thick coating.

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Once the oil is shimmering, carefully place the panko-crusted salmon fillets, panko-side down, into the hot skillet. Sear for 2-3 minutes until the panko is golden brown and crispy.

Flip the salmon fillets and immediately transfer the skillet to the preheated oven. Bake for 8-12 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temperature should reach 145°F or 63°C). The exact cooking time will depend on the thickness of your fillets.

While the salmon is baking, prepare the Lemony Garlic Sauce. In a small bowl, combine the Dijon mustard, honey, grated garlic clove, chopped fresh dill, juice from 1/2 lemon, and zest from 1/2 lemon. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper, or to taste. Whisk until all ingredients are well combined.

Once the salmon is cooked, remove it from the oven. Serve immediately with the Lemony Garlic Sauce drizzled over the salmon or alongside your favorite creamy orzo (recipe for orzo not included in this document).
