Chop the 100g of green onions into small pieces, separating the white parts from the green parts. Set aside.

Heat 100ml of cooking oil in a large pan or wok over medium-low heat.

Add the white parts of the chopped green onions to the hot oil. Fry them gently over low heat, stirring occasionally, until they become fragrant and lightly browned, about 5-7 minutes.

Add the green parts of the green onions to the pan. Continue to fry over low heat until the green onions are slightly crispy and very fragrant, about another 3-5 minutes.

Carefully remove the fried green onions from the oil using a slotted spoon and set them aside on a plate. Leave the infused oil in the pan.

In a separate small bowl, combine the light soy sauce, dark soy sauce, oyster sauce, sugar, salt, and water. Whisk these ingredients well to create the sauce mixture.

Add the prepared sauce mixture to the pan with the remaining scallion oil. Increase the heat to medium and cook the sauce, stirring constantly, until it begins to bubble and slightly thickens, about 1-2 minutes.

While the sauce is cooking, bring a large pot of salted water to a rolling boil. Add the 500g of noodles and cook according to package directions until al dente or cooked through. This usually takes 3-5 minutes depending on the type of noodle.

Drain the cooked noodles thoroughly.

Add the drained noodles to the pan with the bubbling sauce. Return the reserved fried green onions to the pan.

Toss and stir-fry everything together vigorously for 1-2 minutes, ensuring the noodles are thoroughly coated with the sauce and combined with the crispy green onions.

Serve the scallion oil noodles immediately and enjoy!
