Peel and thinly slice the onion, then set it aside.

In a small bowl, combine all the sauce ingredients: brown sugar, mirin, soy sauce, and Korean plum syrup (or agave). Whisk until the sugar is dissolved, then set the sauce aside.
Heat 1 tablespoon of oil in a large pan or skillet over medium-high heat. Add the sliced onions and cook for 1 minute until they begin to soften and become fragrant. Add the minced garlic and cook for another 1 minute, stirring constantly.

Add the ground beef to the pan with the onions and garlic. Break the beef down into smaller pieces with a spoon or spatula. Cook the beef until it is about 30% cooked and has started to brown, about 5-7 minutes.

Pour the prepared sauce over the ground beef mixture. Continue to cook, stirring occasionally, until the sauce has completely evaporated and the beef is fully cooked and caramelized. This process may take 10-15 minutes; be patient and do not drain any liquid.

Once the sauce has evaporated, remove the pan from the heat. Drizzle 1 teaspoon of sesame oil over the ground beef bulgogi and give it a final mix.

To assemble, serve the ground beef bulgogi over warm cooked rice. Garnish with chopped scallions and sesame seeds. Serve with kimchi of your choice on the side. Enjoy!
