Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the diced chicken pieces and cook, stirring occasionally, until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.

Reduce heat to medium. Add diced onion, carrots, and celery to the pot. Sauté, stirring occasionally, until vegetables have softened, about 8-10 minutes.

Stir in minced garlic, dried thyme, and dried rosemary. Cook for 1 minute more until fragrant.

Pour in the chicken broth and bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot. Stir in the heavy cream.

Add the potato gnocchi to the simmering soup. Cook according to package directions, usually 2-3 minutes, or until the gnocchi float to the top and are tender.

Return the cooked chicken to the pot. Stir in the fresh spinach and cook until wilted, about 1-2 minutes.

Stir in the grated Parmesan cheese. Season with salt and black pepper to taste. Serve hot, garnished with additional Parmesan cheese if desired.
