Prepare the flank steak by locating the direction of the grains. Slice the steak thinly across the grain to shorten the muscle fibers, which helps to tenderize the beef.

Place the sliced beef in a bowl. Sprinkle with 1 teaspoon of baking soda and 1 tablespoon of corn starch. Add 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, and 1 tablespoon of dark soy sauce. Mix thoroughly to coat the beef. Marinate for 20 minutes; this 'velveting' method tenderizes the beef.

While the beef marinates, prepare the sauce. In a separate bowl, combine 5 cloves of minced garlic, 2 tablespoons of ginger paste, 1/4 cup of dark soy sauce, 1/3 cup of soy sauce, 2 tablespoons of oyster sauce, 2 tablespoons of rice vinegar, 2 teaspoons of sugar, 1 teaspoon of MSG, 1/2 cup of water, and 2 tablespoons of corn starch. Mix all the sauce ingredients together until well combined. (Tip: Corn starch mixes better when the liquid is cold).

Heat a wok or large pan over high heat. Add 1 tablespoon of sesame oil. Once hot, add the marinated beef to the wok. Cook for approximately 40 seconds, then give it a quick stir. If desired, add any leftover steak at this point.

Pour the prepared sauce over the beef in the wok. Add 8-12 ounces of blanched broccoli. Cook everything together for 1 minute, stirring continuously to coat the beef and broccoli evenly with the sauce.

Serve the beef and broccoli immediately on a bed of noodles or rice. Spoon any extra sauce over the dish before serving. Enjoy!
