Combine the thinly sliced steak with 1 1/2 tablespoons of light soy sauce, 1/2 tablespoon of oyster sauce, 1 teaspoon of cornstarch, and 1/2 teaspoon of sesame oil in a bowl. Mix well to ensure the steak is evenly coated. Set aside to marinate for at least 15 minutes.

Cook the Mr Chen’s Extra Wide Hand Pulled Noodles according to the packet instructions. Once cooked, drain the noodles and set them aside.

Heat a large pan or wok over high heat with a drizzle of rice bran oil. Add the marinated steak to the hot pan and cook for 2–3 minutes until it is browned and nearly cooked through. Remove the cooked steak from the pan and set it aside.

In the same pan, add a little more oil if needed. Then, add 3 minced garlic cloves, 1/2 teaspoon of grated ginger, 1/2 teaspoon of chilli flakes, and half of the chopped spring onion. Cook for 30 seconds until the aromatics are fragrant.

Add 3 tablespoons of unsalted butter to the pan and let it melt into the aromatics.

Stir in 1 1/2 tablespoons of soy sauce, 1 tablespoon of hoisin sauce, 1 tablespoon of honey, and 3 tablespoons of beef broth. Simmer the sauce for 1–2 minutes until it becomes glossy and slightly thickened.

Add the cooked noodles, the previously cooked steak, and the remaining half of the spring onion back into the pan with the sauce. Toss everything together until the noodles are silky and thoroughly coated in the sauce.

Finish the dish with a drizzle of chilli oil and fresh coriander. Serve immediately.
