Preheat the oven to 200°C.

In a large bowl, whisk the Greek yogurt and eggs together until the mixture is smooth and well combined.

Add 2-4 tablespoons of honey (adjusting the amount based on your desired sweetness) and 1 teaspoon of vanilla to the yogurt and egg mixture. Whisk again until all ingredients are thoroughly combined.

In a separate medium bowl, mix the 2 teaspoons of baking powder and 1/4 teaspoon of bicarbonate soda with the 400g of flour (either bread flour or all-purpose flour). Ensure the dry ingredients are evenly distributed.

Pour the dry flour mixture into the wet ingredients. Add 180g of chopped dark chocolate or chocolate chips and 1/2 teaspoon of salt to the bowl.

Mix all the ingredients gently until everything is just combined. Be careful not to overmix, as this can lead to tough brioche.

Prepare a baking tray by lining it with parchment paper. Optionally, brush a little oil on the bottom of the parchment paper to prevent sticking.

Spoon out the dough into 12 individual buns onto the prepared baking tray. An ice cream scoop can be used to create uniform portions.

Leave the buns to settle on the baking tray for 2-3 minutes before placing them into the preheated oven.

Bake the buns for 5 minutes at 200°C.

After 5 minutes, turn the oven temperature down to 180°C and continue to bake for an additional 12-15 minutes, or until the brioche buns are golden brown and cooked through.

Optionally, as soon as the brioche buns come out of the oven, brush them with a mixture of honey and melted butter for added shine and flavor.

Serve warm and enjoy!
