In a blender, combine the 200 grams of red chilies, 1 whole head of garlic, and 2 Roma tomatoes.

Add 1/4 cup of water to the chili, garlic, and tomato mixture in the blender.

Blend all these ingredients together until the mixture is smooth.

Pour the blended mixture into a pot.

Add 1/2 cup of white vinegar to the pot.

Add 2 tablespoons of fish sauce to the pot.

Add 2 tablespoons of sugar to the pot.

If desired, add 1 teaspoon of MSG to the pot.

In a separate small bowl, combine 1 tablespoon of cornstarch with 2 tablespoons of water to create a smooth slurry.

Add the cornstarch slurry to the pot with the chili mixture, stirring well to combine.

Place the pot over medium-high heat and bring the sauce to a boil.

Once boiling, reduce the heat to low and simmer for 10-15 minutes. Stir occasionally during this time until the sauce has thickened to your desired consistency.
