Cut 500 grams of chicken breast into strips. In a bowl, combine the chicken strips with 1 tablespoon olive oil, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon paprika, 1 teaspoon garlic powder, 1/2 teaspoon dried oregano, and 1/2 teaspoon dried thyme. Mix thoroughly to ensure the chicken is evenly coated with the spices.

Heat a pan over medium-high heat and add the seasoned chicken strips. Cook until they are golden brown, approximately 5-7 minutes per side. Once cooked, remove the chicken from the pan and set it aside.

In a separate bowl, combine 1/2 cup plain yogurt, 1/4 cup mayonnaise, 1 tablespoon lemon juice, 1 minced garlic clove, 1/4 cup chopped fresh parsley, and 1/4 cup chopped fresh mint. Mix all ingredients well until a smooth sauce is formed.

In the same pan used for the chicken, add 2 tablespoons olive oil. Add 1/2 sliced red onion, 1/2 sliced green bell pepper, 1/2 sliced red bell pepper, and 1/2 sliced yellow bell pepper. Sauté the vegetables until they begin to soften, about 5-7 minutes.

To the sautéed vegetables, add 1/2 cup water, 1/2 cup passata, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, and 1/2 teaspoon dried thyme. Mix well and let the mixture simmer until the sauce thickens slightly and the vegetables are tender, about 8-10 minutes.

Lay out 2 large tortillas. Spread a generous layer of the prepared creamy herb sauce on each tortilla.

Distribute the cooked chicken strips evenly over the sauce. Spoon the sautéed bell pepper mixture on top of the chicken.

Add fresh lettuce, sliced tomatoes, and sliced red onion (amounts to taste) to each wrap. Crumble feta cheese over the toppings.

Carefully roll up each tortilla to form a wrap. For a warm, slightly crispy finish, preheat your oven to 180°C (350°F). Place the assembled wraps in a baking dish and bake for 10-15 minutes.

Serve the chicken wraps immediately and enjoy!
