Preheat your oven to 400°F. Line a large sheet pan with parchment paper for easier cleanup.

On the prepared sheet pan, combine the diced sweet potatoes, rinsed chickpeas, broccoli florets, and red onion wedges. Drizzle generously with 2 tablespoons of olive oil.

Season the vegetables well with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of mixed herbs, and 1 teaspoon of paprika. Toss everything together until the vegetables are evenly coated.

Spread the seasoned vegetables in a single layer on the sheet pan. Sprinkle the crumbled feta cheese over the top.

Place the sheet pan in the preheated oven and bake for 25 minutes.

While the vegetables are baking, prepare the chicken marinade. In a medium bowl, whisk together 1 tablespoon of olive oil, 1 tablespoon of soy sauce, 1/2 teaspoon of paprika, 1 teaspoon of lemon juice, and a pinch of salt and pepper. Add the chicken breasts to the marinade and toss to coat evenly.

After the vegetables have baked for 25 minutes, remove the sheet pan from the oven. Carefully add the marinated chicken breasts to the sheet pan, nestling them among the vegetables.

Return the sheet pan to the oven and continue to cook for another 18–20 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the vegetables are tender and slightly caramelized.

While the chicken is cooking, prepare the high-protein sauce. In a small bowl, combine the 1/2 cup of high-protein Greek yogurt, 2 tablespoons of roasted red pepper paste, 1 teaspoon of lemon juice, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Add 1 tablespoon of water and whisk until the sauce is smooth and the desired consistency is reached. Add more water if needed to thin.

Once cooked, remove the sheet pan from the oven. Serve the chicken and vegetable tray bake immediately with a generous dollop of the prepared high-protein sauce.
