Preheat your oven to 325 degrees F (160 degrees C). Lightly spray a standard loaf pan and line it with parchment paper, allowing some overhang on the sides for easy removal.

In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and white sugar until light and fluffy.

Add the mashed banana to the butter and sugar mixture and mix until just combined.
Incorporate the eggs, vanilla paste, and molasses into the mixture. Mix again until well combined. Don't worry if the mixture appears to separate or 'split' at this stage; it will come back together.

In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Pour half of the buttermilk into the batter and mix thoroughly. Add the remaining buttermilk and mix until fully incorporated.

Pour the batter into the prepared loaf pan.

Bake in the preheated oven for approximately 60 minutes, or until deeply golden brown and firm to the touch. An inserted thermometer should read an internal temperature of 200-205 degrees F (93-96 degrees C).

Remove the banana bread from the oven. Immediately pour the Grade A maple syrup evenly over the top. The maple syrup will absorb quickly, so use a pastry brush to distribute it in small sections if needed.

Sprinkle flaky sea salt over the top of the warm banana bread. Allow the banana bread to cool completely in the pan before slicing and serving. This can take 1-2 hours.
