Preheat your oven to 180°C (350°F). Line a large baking tray with parchment paper.

In a large bowl, remove the meat from the Italian style pork sausage casings and add it to the bowl. Add the pork and beef mince.

Add the chopped onion, crushed garlic, garlic powder, salt, pepper, sweet chili sauce, and 1 cup of shredded cheese to the meat mixture. Using gloved hands, mix all ingredients thoroughly until well combined.

Lay out one sheet of puff pastry on a clean surface. Place four cheese slices on one half of the pastry sheet, leaving a small border. Take a portion of the prepared meat mixture, flatten it into a log shape, and place it on top of the cheese slices. Sprinkle extra shredded cheese over the meat.

Fold the other half of the puff pastry over the filling and roll it up tightly to form a sausage roll. Repeat this process with the remaining pastry sheet, cheese slices, and meat mixture.

Cut each rolled sausage pastry into desired individual lengths (about 4-5 cm each). Place the cut sausage rolls on the prepared baking tray. Brush the top of each sausage roll with the beaten egg wash.

Spray a pie dish with cooking oil. Line the pie dish with any leftover puff pastry, trimming any excess from the edges. Also, line muffin tins with smaller pieces of leftover puff pastry for the mini pies.

In a separate bowl, whisk together the eggs, milk, and chopped onion. Stir in the chopped ham.

Pour the egg, milk, ham, and onion mixture into the pastry-lined pie dish. Arrange the sliced tomatoes and fresh basil leaves on top. Sprinkle with shredded cheese. Season with salt and pepper.

Fill each pastry cup in the muffin tin with the egg mixture and a sprinkle of shredded cheese.

Place the baking tray with sausage rolls, the quiche, and the mini pies into the preheated oven. Bake for 30 minutes, or until the sausage rolls are golden brown and cooked through, and the quiche and mini pies are set and golden.
