In a bowl, combine the thinly sliced flank steak with 1/2 teaspoon baking soda and 1 tablespoon water. Mix well to ensure the steak is coated. Let the meat marinate for at least 15 minutes for tenderization. After marinating, season the steak with salt and black pepper to taste, and toss with 2 teaspoons oil.

Preheat your air fryer to 400°F (or its maximum temperature).

Add 600 grams of frozen French fries to the preheated air fryer. Air fry for 12 minutes until golden and crispy. Once cooked, remove the fries and set them aside.

Place the marinated flank steak into the air fryer basket. Air fry for 12-15 minutes, or until the steak has a nice browning on the exterior. It's not necessary to cook the steak all the way through at this stage. Remove the beef and set it aside.

Add 1 medium red onion, cut into small chunks, to the air fryer. Air fry for approximately 8-10 minutes, or until they begin to char.

Add 6 Roma tomatoes, cut into chunks, and 2 stalks sliced green onions to the air fryer with the red onions. Continue to air fry for approximately 8-10 minutes.

While the vegetables are cooking, prepare the stir fry sauce. In a blender, combine 1/2 cup low sodium soy sauce, 2 tablespoons oyster sauce, 2 tablespoons red wine vinegar, 1 orange bell pepper, 1 habanero, 10 cloves garlic, and 15 grams (1 inch piece) ginger. Blend until smooth.

Remove the air fryer basket containing the cooked onions, tomatoes, and green onions. Add the previously cooked steak back into the basket. Pour the blended stir fry sauce over the steak and vegetables. Mix everything together thoroughly with tongs.

Return the air fryer basket to the air fryer and cook for approximately 5 minutes to finish cooking the beef and allow the sauce to integrate and thicken slightly.

Remove the basket from the air fryer. Toss in the previously cooked French fries and 1 bundle chopped cilantro. Give it a final mix.

Split the Lomo Saltado mixture into 5 evenly sized servings. Serve each portion over a very thin layer of cooked rice (prepared separately).
