Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch baking dish.

In a large mixing bowl, combine the cooked shredded chicken, diced onion, diced bell pepper, shredded zucchini, and chopped spinach.

Add 8 ounces of salsa verde, blended cottage cheese (start with 1 cup and add more if a saucier consistency is desired), lime juice, garlic powder, onion powder, cumin, chili powder, smoked paprika, salt, and black pepper to the bowl. Mix thoroughly until all ingredients are well combined.

Lay out one flour tortilla. Spoon a generous amount of the chicken and vegetable filling down the center of the tortilla. Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.

Once all enchiladas are arranged in the dish, pour the additional 1/2 cup of salsa verde evenly over the top. Sprinkle the shredded Pepper Jack cheese over the salsa verde.

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.

Remove from oven and let rest for a few minutes before serving.
