Preheat your oven to 400°F. Lightly grease a 12-cup muffin tin.

Lay out the two sheets of pre-made pie dough on a clean, flat surface, such as a wooden cutting board. Ensure they are slightly overlapping if needed to create a larger surface.

Place the 12-cup muffin tin upside down on top of the dough sheets. Gently press down firmly to create circular indentations in the dough, corresponding to the cups of the muffin tin. This will guide your filling placement and cuts.

Using an ice cream scoop or cookie scoop, place approximately 2 tablespoons of apple pie filling into the center of each dough indentation. Aim for 9 portions, as this recipe yields 9 bites.

Place one small 1/2-inch square piece of unsalted butter on top of the apple pie filling in each of the 9 portions.

Using a pizza cutter, carefully cut the dough into individual squares around each filled portion. The cuts should separate each filled square, aligning with the indentations you made earlier.

Carefully transfer each filled dough square into a cup of the prepared muffin tin. Gently fold the four corners of the dough square inwards towards the center, overlapping slightly, to fully enclose the filling and butter, forming a small pouch or bite.

Using a pastry brush, apply an egg wash (1 beaten egg) or 2 tablespoons of melted butter over the top surface of each assembled apple pie bite in the muffin tin. This will help them brown beautifully.

Place the muffin tin into the preheated 400°F oven and bake for 18 to 22 minutes, or until the apple pie bites are golden brown and puffed.

Once baked, carefully remove the apple pie bites from the muffin tin. Allow them to cool slightly before serving. They are best served warm, optionally alongside scoops of vanilla ice cream and drizzled with honey.
