Stir-fry Vegetables: In the same hot wok (add a little more oil if needed), add the sliced 1/2 red onion. Stir-fry for 1-2 minutes until slightly softened. Add 1 tablespoon of aji amarillo paste and 2 cloves of minced garlic. Continue to stir-fry for another minute until fragrant.

Add Tomato and Sauces: Add the sliced 1/2 tomato to the wok. Deglaze the pan with a splash (about 1 tablespoon) of red wine vinegar, scraping up any browned bits from the bottom of the pan. Add a splash (about 2 tablespoons) of soy sauce and a splash (about 1 tablespoon) of oyster sauce. Stir well to combine and create the sauce.

Combine and Finish: Return the seared beef strips to the wok with the sauce and vegetables. Add the prepared French fries to the wok. Toss everything together quickly to combine, ensuring the fries and beef are coated in the flavorful sauce.

Garnish and Serve: Add 1/4 cup of chopped cilantro to the Lomo Saltado. Give it one final quick toss. Serve immediately while hot, ideally with a side of rice.
