In a large bowl, combine the mashed potato with the flour, sugar, dry yeast, salt, milk, and 1 egg. Mix all ingredients thoroughly until well combined.

Add the butter to the mixture and knead the dough for 15 minutes until it is smooth and elastic.

Cover the dough with a cloth or plastic wrap and let it rise in a warm place for 1 hour, or until doubled in size.

While the dough is rising, prepare your chosen filling. For the Cheese & Ham Filling: In a saucepan, combine 1 cup milk, 1 tablespoon sugar, 1 tablespoon flour, and 1 tablespoon butter. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the cheese and turkey ham. Add chopped parsley and mix well.

For the Chicken Filling: Cook the chicken breast and shred it into small pieces. In a bowl, combine the shredded chicken with the yogurt, mayonnaise, salt, pepper, paprika, garlic powder, onion powder, chili flakes, oregano, thyme, and rosemary. Mix well to combine all spices and sauces. Add the cream cheese and mix again until thoroughly combined.

Once the dough has risen, divide it into 6 equal pieces. Shape each piece of dough into a smooth ball.

Take one dough ball and flatten it into a disc. Place your desired filling in the center of the flattened dough. Carefully close the bun, pinching the edges together to seal the filling completely inside. Repeat with the remaining dough balls and filling.

Arrange the filled buns on a baking tray lined with parchment paper. Let the buns rest for an additional 20 minutes to allow them to puff up slightly.

Preheat your oven to 180°C (350°F).
Prepare an egg wash by whisking together 1 egg yolk and 1 teaspoon milk. Brush the tops of the buns evenly with the egg wash.

Bake in the preheated oven at 180°C (350°F) for 15-20 minutes, or until golden brown. Serve warm.
