Place the 300g of thinly cut sirloin steak in a bowl. Add 2 tablespoons of cornflour to the steak. Mix thoroughly with your hands until all the beef strips are well coated with the cornflour.

Heat a generous amount of oil in a large pan or wok over medium-high heat. Once the oil is hot, add the coated beef strips to the pan. Fry the beef until it is crispy and golden brown on all sides. This will take approximately 5-7 minutes. Once cooked, remove the crispy beef from the pan and place it on a wire rack or paper towel-lined plate to drain any excess oil.

In a separate bowl, combine the sauce ingredients: 3 tablespoons soy sauce, 2 tablespoons honey, 2 tablespoons tomato ketchup, 1 tablespoon rice wine vinegar, 1 teaspoon sesame oil, 2 teaspoons ginger paste, and 2 teaspoons garlic paste. Whisk all the ingredients together until they are well combined and smooth.

In the same pan used for the beef (with any remaining oil or a fresh drizzle), add the sliced red pepper, the white parts of the 80g sliced spring onions, and the 3 thinly sliced garlic cloves. Stir-fry the vegetables for 3-4 minutes until they are slightly softened but still have a bite.

Pour the prepared sauce mixture into the pan with the sautéed vegetables. Bring the sauce to a simmer, allowing it to bubble gently and thicken slightly for about 2-3 minutes. Once the sauce has thickened, add the crispy beef back into the pan. Toss everything together until the beef and vegetables are thoroughly coated in the sauce.

Transfer the crispy garlic beef to a serving dish. Garnish with the green parts of the sliced spring onion and a sprinkle of toasted sesame seeds. Serve immediately.
