Heat 2 tablespoons of the reserved chicken-frying oil in a wok on high heat.

Add 1 1/2 tablespoons finely chopped garlic, 1 tablespoon finely chopped ginger, and 3-4 sliced green chillies to the hot oil. Stir-fry for 15-20 seconds.

Add 1 medium diced onion and 1 medium diced green capsicum to the wok. Toss on high heat for 30-45 seconds, ensuring the vegetables remain crunchy.

Add the prepared sauce mixture and 1/2 teaspoon chicken broth powder to the wok. Toss quickly to combine.

Add the crispy fried chicken to the wok and toss aggressively on high heat for 30-60 seconds, ensuring every piece of chicken is coated with the sauce.

Finish the dish by stirring in 2 tablespoons chopped spring onions.

If a slightly saucier consistency is desired, prepare the optional cornflour slurry by mixing 1 teaspoon cornflour with 2 tablespoons water. Add the slurry little by little to the wok while tossing until the desired consistency is achieved.
